He was probably being insulting because he felt Vader would step in if things went awry...
Still wasn't really very ironic...
He said that because he tought he could do it all by himself.

He said that in order to notify to the audience that they were bounty hunters, not just regular scum but a special kind of scum
It was better than Darth VAder saying something like
"as you know...You're all Bounty Hunters
and as Bounty hunters I'd like you to hunt a bounty.
And when you've hunted this Bounty I give you a reward...
as is the way with Bounty hunters
And you are all bounty Hunters...."
True, he supposedly said it out of fear too.
