I'm going to have to go with Aayla Secura. After reading some of the newer books, Daala doesn't seem too bad, either. But, I've always enjoyed the Dark Horse comics involving Aayla and Quinlan Vos. I was real happy that stuck her into the movies. Very nice touch. Although, I was a little disappointed they didn't have the neat tattoo work on her lekku, as they did in the comics.
hmm, Barriss Offee. Just something about the actress and especially after reading the clone wars novel that focused on her. Medstar I believe.
Daala, because she's evil like my wife... and I kinda liked Aayla until she opened her mouth. She sounds like a gypsy and has the intellect to match.
Ahsoka's growing on me as well. Her race is actually cuter to me then Twi'leks... though it is VERY close.. and she's a smartass.
In that same vein one would think I'd like Shaak Ti... but no. She has no personality whatsoever. She's just... there. Eye candy. Eye candy who can fight but seems to have no brain. Even in the comics. She says things but they might as well just tattoo "Generic Plot Advancer" across her giant chest.

Spoilers for people who haven't played Force Unleashed. Both of you.
Even in Force Unleashed where her appearance is meant to be so dramatic and her death so heartrending, and I couldn't buy into it. She didn't seem to care, why should I?

Given that, Orli Shoshan was an excellent choice for the role. Israeli modeling agencies don't charge a lot, she has no personality whatsoever and is pretty much just a set of boobs for hire. And before anyone jumps up to defend her based on her mythical "martial arts past" I feel you need to know the sequence of events that lead up to her "martial arts background":
1) Military Service is _mandatory_ for every Israeli citizen
2) She was a Cook's Assistant in their army. Not even a cook, but a walking kitchen utensil.
3) She then went on to be a luggage inspector until she was old enough to get into her trust fund, at which point she screwed around for a few years.
4) She then took 4 months of Krav Maga. Not when she was in the Army; from a school. And only for 4 months.
5) Got Job as Shaak Ti due to her amazing military and martial arts background.
6) Hasn't worked since. Books appearances as Shaak Ti because her trust fund ran out in step 3 and 4.

This one says she was a weapons instructor.

Didn't know she was from Israel. That's kind of cool. Lucas certainly has an eclectic and varied group of actors and actresses for his movies from literally all over.
I do have to agree with you, though, on the Aayla Secura accent. When I first heard that, it kind of threw me off. Not what I expected, really.
This one says she was a weapons instructor.
Wikipedia says that also. You know what their source is? Star Wars Wikia. You know what THEIR source is? Wikipedia. My source is her own interview given to the Australian variant of Cosmo, in October 2002 after she showed up on some aerobics show. You'll notice that even on her own website (where she treats her job of luggage inspector as if she were "hunting out deadly bombs") she doesn't say anything about her supposed weapons background anymore.
And even people who barely care about their own military service take a little pride in it, and it rankles us when people lie like this. You'd spend 4 years _and combat experience is required_ just getting qualified to do so in the Marines... and the Isreali Army is a lot harsher on their training requirements. They are very proud.. and rightfully so, of having some of the most proficient soldiers on the face of the planet; they didn't get there by letting trust fund princesses teach real soldiers how to handle weapons they themselves have no experience in using.
Plus, thanks to the way society there runs, women in the Israeli army cannot become these things. The only combat instruction roles they are allowed to have are Tank (not tank weapons systems either... just driving), Combat Lifesaving, and they can run PT. The Israeli army is... incredibly chauvinist to say the least, and any Israeli would know this. USA has more combative style opportunities then Israel probably ever will; their own higher ups admit that they give women useless jobs just to ensure everyone serves their time as required by law. This even despite bizzare articles using weasel words and spurious conclusions to claim otherwise. Women are treated like fashion accessories in the Israeli Army. Right or WRONG, it's still the way things are.
At least in the good old US of A we let women fly combat helicopters and do guard duty.
I would have to say Mara Jade Skywalker, Daala, Ashoka Tano, Oh and then probably Leia.
